Easy Almond Cookies

Delicious and so simple, these cookies are my year round go-to. 

Notes: These cookies are gluten-free and can be enjoyed on Passover as well.

Yields: 30-35 cookies



300 grams ground almonds

1 C sugar

2 t lemon or orange zest

3 egg whites

1/2 t salt

1 t Vanilla extract

1 t Almond extract

Powdered Sugar for garnishing (optional) 

Almonds for garnishing (optional) 


  1.  Preheat oven to 160 Celsius (320 Fahrenheit). Line baking sheets with parchment paper.
  2. Mix almond flour, sugar, salt, zest, and extracts. Add the egg whites one by one. Mix well to form dough. 
  3. Refrigerate for half an hour. Roll into balls around 2-3 cm. If desired, coat in powdered sugar and garnish with almonds.
  4. Bake for about 14-18 minutes.
