Delicious and so simple, these cookies are my year round go-to.

Notes: These cookies are gluten-free and can be enjoyed on Passover as well.
Yields: 30-35 cookies
Ingredients:
300 grams ground almonds
1 C sugar
2 t lemon or orange zest
3 egg whites
1/2 t salt
1 t Vanilla extract
1 t Almond extract
Powdered Sugar for garnishing (optional)
Almonds for garnishing (optional)
Method:
- Preheat oven to 160 Celsius (320 Fahrenheit). Line baking sheets with parchment paper.
- Mix almond flour, sugar, salt, zest, and extracts. Add the egg whites one by one. Mix well to form dough.
- Refrigerate for half an hour. Roll into balls around 2-3 cm. If desired, coat in powdered sugar and garnish with almonds.
- Bake for about 14-18 minutes.
